Hi all.

Well, the Great Meringue Experiment has ended, and the verdict is this: Meringue cookies can't be made with Splenda. Tammy tried twice, and neither time did we get anything satisfactory, despite the box's claim that Splenda can be used in baking.

But all is not lost. Her first attempt was lemon Meringues with sugar, and those came out just great. So we know how to make them - just not how to make them calorie free. Oh, well, they're pretty low in calories anyway.

Another fun bit was finding a sale in SuperTarget. We had headed there because of the Farmer's market outside, and ducked in to pick up more eggs for the experiments. While there we found that they had a 'Buy two for $5' sale on the brand of Meringue we enjoy best, and they had a few flavors we hadn't seen before - Triple Chocolate Chip and Mint Chocolate Chip. Mint Chocolate Chip is marvelous.

I would suspect, but I do not know, that perhaps splenda works where the taste of sugar is needed, but won't work where it makes up an important part of the structure of the finished product. As I think it would in most very sugary things like cookies or candy.
