See if you can use stuff from the Complete Arcane and Complete Mage books. If so, then you'll definitely want to get some of the reserve feats from Complete Mage - depends on what level you're starting at. Also, check out the specialist prestige class from Complete Mage.
If you don't mind shuffling lots of details, a summoner can be a ton of fun - take Conjuration as your specialty, grab the 'Spell Focus (Conjuration)' and... I forget the name, but there's this great feat in the PHB for giving all critters you summon +4 STR and +4 Con. You can also find lists of creatures per 'Summon Monster N' spell with their stats worked out, which is necessary.
Big boom is always fun with Evocation spells. Specializing in evocation is stereotypical *because* it's so easy and fun to do. Make sure to load up on the feats that increase your DC for the evocation spells and that also give you bonuses on overcoming spell resistance, though.
Alternately, some mix of Charm and Illusion spells is great for a change. Either convince the monster that he's your friend, or that there's a pit separating him from you.
